Ingredients:
Brown Rice Flour, Potato Starch, Flax Meal, Xanthan Gum, Baking Powder, Baking Soda, Spices, LOVE.
Ingredients/Materials Needed:
2c brown sugar, 1c vegetable oil, 2 tsp vanilla, 6 ripened bananas, 1 complete package GF Banana Bread Baking Mix, 2 loaf pans or a 24 muffin tin with standard liners, standing mixer and sugar for sprinkling top of dough (recommended but not required).
Directions:
Using paddle attachment on medium speed, combine brown sugar, oil and vanilla in bowl of standing mixer.
With mixer on low, add bananas a couple at a time. Once all bananas are mixed in, turn mixer on high for a few seconds to further break up and incorporate bananas.
With mixer on low, add package baking mix a cup at a time into the banana mixture until the dry absorbs and is well combined. Use all of the package. Crank mixer to high until the batter has a whipped texture (about 30 seconds).
Scoop batter into liners/pans. Sprinkle top of batter with turbinado or white sugar. Batter will yield 24 muffins or 2 loaves. Bake at 350˚ F until golden brown on top and a knife poked through center of loaf comes out clean. Loaves take about 60-75 min., muffins about 30 min. depending on the oven.
